Microwave Carrot Cake Bars

Moist, cinnamon-spiced carrot cake bars with chopped nuts, finished with the frosting you like best. The batter cooks in 5 minutes in the Silicone Rectangular Mould, which turns out cleanly so the cake is easy to cut into neat bars.

Method

  1. In a Tupperware Thatsa medium bowl, combine the carrots, flour, both sugars, cinnamon and nuts. Make a well in the centre, add the eggs, oil and vanilla, and mix until fully incorporated.

  2. Pour into the Tupperware Silicone Rectangular Mould, level the top and microwave at full power (1000 W) for 5 minutes, until a toothpick pushed into the centre comes out clean.

  3. Let cool slightly, turn out of the mould, cut into bars and spread with frosting.
