Carrot, Coconut and Pecan Cake

A moist snack cake of carrot, fresh coconut and pecans, spiced with plenty of cinnamon. The Grate Master shreds the carrots, coconut and nuts in turn without a food processor, and the Ultra Pro bakes the cake evenly and serves it at the table.

Method

  1. Heat the oven to 375 °F (190 °C) and grease the Tupperware Ultra Pro 2 l (2 qt) square pan or casserole.

  2. In a Tupperware Thatsa medium bowl, mix the flour, brown sugar and cinnamon until evenly combined.

  3. Fit the Grate Master shredder accessory with the large grating cone and set a bowl underneath. Feed in the carrots two pieces at a time and turn the handle, pressing with the plunger as needed. Grate the coconut, then the pecans, in the same way.

  4. Set aside 1/2 cup (40 g) of the grated coconut. Add the carrots, pecans and the rest of the coconut to the dry ingredients, make a well, pour in the eggs, oil and milk, and mix until evenly combined.

  5. Pour the batter into the Ultra Pro and bake for 30 to 35 minutes, until a toothpick in the centre comes out clean. Scatter the reserved coconut over the top.
