Potato and Egg Nests

Method

  1. Heat the oven to 400 °F (205 °C). Shred the cooled potatoes with the Tupperware Grate Master fitted with the coarse cone.

  2. Divide the potato between 6 cups of a muffin tin, press it into the base and sides, and spray with cooking spray. Bake for about 15 minutes, until browned.

  3. Crack an egg into each nest and bake for 5 to 10 minutes more, depending on how firm you like the yolks. Season with salt and pepper and serve.
