Spiced Ginger Cake

A dense, gently spiced cake made with fresh and crystallised ginger, maple syrup and a touch of black pepper. The Pro Ring set inside the MicroPro Grill gives it a neat round shape, and it bakes in the microwave in under a quarter of an hour.

Method

  1. In the Tupperware Thatsa medium bowl, beat the maple syrup, sugar, oil, eggs and fresh ginger with the Tupperware Whisk.

  2. In a small bowl, whisk the flour, baking powder, pepper, cloves and salt, then add them to the Thatsa Bowl and whisk until the batter is smooth.

  3. Set the Tupperware Pro Ring in the base of the Tupperware MicroPro Grill, pour in the batter and dot the crystallised ginger evenly over the top.

  4. Put the cover on in casserole position and microwave at 50% power (500 W on a 1000 W oven) for 12 to 14 minutes.

  5. Leave to stand closed for 5 to 10 minutes. Run a thin silicone spatula around the cake, lift off the Pro Ring and slide the cake out with a spatula.

  6. Mix the powdered sugar with the ground ginger and sift it over the cake before serving.
