Method

  1. Set the egg inserts in the Tupperware Microwave Breakfast Maker and pour 3 tbsp water into each one; the water should fully cover the fill line.

  2. Crack 2 eggs into each insert. Put the cover on and microwave at full power (1000 W maximum) for 1 to 2 minutes, until the yolks are cooked through.

  3. Lift the eggs out of the inserts, pat them dry with paper towel and chop them finely. Put them in a bowl.

  4. Stir in the mayonnaise, lemon juice, parsley, chives, pickles and salt.

  5. Spoon onto bread or into lettuce leaves to serve.
