Golden Coconut Bites

Small coconut cakes in the style of macaroons, made from desiccated coconut, eggs and sugar. The Nigiri Party is used here as a mould: it presses the mixture into neat oval shapes that hold together in the oven.

Method

  1. Heat the oven to 170 °C (340 °F).

  2. Stir all the ingredients together in the Tupperware Pro batter bowl 1.5 l with a silicone spatula.

  3. Brush the base and lid of the Tupperware Nigiri Party lightly with oil using the silicone brush. Fill the base level with the coconut mixture, using the spatula.

  4. Fit the lid, press the mixture down firmly and turn the shapes out onto a silicone baking sheet placed on the cold oven rack. Repeat with the rest of the mixture.

  5. Bake for 15 minutes, until golden. Leave to cool and serve cold.
