Rainbow Layered Gelatin

A tall striped dessert of red, orange, yellow, green and blue fruit gelatin separated by creamy milk layers. The Jel Party ring mould with its centre seal gives neat, even layers and releases the whole ring cleanly when turned out.

Method

  1. Fit the centre seal into the Tupperware Jel Party mould and brush the inside lightly with oil.

  2. Bring 120 ml (1/2 cup) water to the boil, stir in the red gelatin until dissolved, then add 120 ml (1/2 cup) cold water. Pour into the mould, cover and refrigerate for 30 to 60 minutes, until firm.

  3. Meanwhile, stir the evaporated and condensed milks together in a medium Tupperware Thatsa Bowl.

  4. When the red layer is set, stir 1 packet of unflavoured gelatin into 30 ml (2 tbsp) cold water in a microwave-safe container and leave for 2 minutes. Microwave at 900 W for 15 to 20 seconds, then stir in 235 ml (1 cup) of the milk mixture.

  5. Pour the milk layer over the red one, cover and chill for 30 to 60 minutes, until firm.

  6. Repeat, alternating a coloured layer and a milk layer, in the order orange, yellow, green and blue. After the blue layer, cover and chill for 5 to 6 hours.

  7. Turn the mould over so the cover is underneath, remove the centre seal and lift off the mould. Keep in the fridge until serving.
