Baked Salmon Sushi Cups

Squares of nori pressed into muffin cavities, filled with seasoned sushi rice and topped with salmon in a spicy mayonnaise sauce, then baked until the nori crisps. Method

  1. Heat the oven to 400 °F (200 °C).

  2. Put the rice and water in the base of the Tupperware Microwave Rice Maker, add the grains insert tabs side up and clip the cover in place. Microwave on high power (1000 W) for 5 minutes, then at 50% power (500 W) for 15 minutes.

  3. Take out the grains insert, stir the rice vinegar and salt into the rice, cover and leave until completely cool.

  4. Meanwhile, stir the mayonnaise, soy sauce, sesame oil, chili sauce, honey and lime juice together in the Tupperware Thatsa Bowl junior, then fold in the salmon.

  5. Set two Tupperware Silicone Muffin Moulds on a metal baking sheet and press a nori square into each cavity. Add a medium Portioning Scoop of rice to each, then top with the salmon.

  6. Bake for 15 to 18 minutes. Cool for 5 minutes, unmould, add your toppings and serve at once.
