Quinoa and Pork Tenderloin Salad

Method

  1. Fill the water tray of the Tupperware Smart Multi-Cooker to the line and put the pork in the steamer base. Cover and microwave on high power (1000 W) for 17 minutes, until the centre reaches 165 °F (74 °C).

  2. Let the pork rest for 5 minutes, then slice it thinly.

  3. Put the quinoa and 2 cups (475 ml) water in the Tupperware Microwave Rice Maker. Cover, microwave on high power (1000 W) for 5 minutes and leave to stand for 15 minutes.

  4. Let the quinoa cool a little, fluff it with a spoon and mix in the artichokes, olives, spinach, tomatoes and parsley.

  5. Whisk the balsamic vinegar, olive oil and garlic in a small bowl, season with salt and pepper and stir into the salad. Serve topped with the sliced pork.
