Apple Coffee Cake

Method

  1. Heat the oven to 350 °F (175 °C).

  2. In a large bowl, whisk the brown sugar, granulated sugar, cinnamon and softened butter until the mixture looks like damp sand. Beat in the eggs, vanilla and milk, then fold in the flour, baking powder and salt until just smooth.

  3. Spread the batter in an even layer in the Tupperware Ultra Pro 2 l square pan (or the Ultra Pro 2 l casserole).

  4. For the topping, mix the melted butter, oats, flour and brown sugar in a small bowl. Fit the Tupperware Grate Master with the slicing cone, set a bowl underneath and slice the apple quarters one by one. Stir the slices into the oat mixture.

  5. Scatter the apple topping over the batter and bake for 40 to 50 minutes, until a knife inserted in the centre comes out clean. Let cool slightly in the Ultra Pro before cutting into 9 squares.
