Method

  1. Heat the oven to 170 °C (340 °F).

  2. Cut each crêpe in half and fold each half in two to make a triangle. Brush with melted butter, roll around a Tupperware Cornets Party cone and stick the edges together with 5 ml (1 tsp) cream cheese, pressing firmly.

  3. Bake for about 8 minutes, leave for 5 minutes, then slide the crêpe cones off the moulds.

  4. Whisk the egg yolks, sugar and ground almonds together well. Add the butter in small pieces and keep whisking until the cream is smooth.

  5. Cut the apricots into small pieces, fold them into the almond cream and fill the cones.
