King Cake Croissants with Almond Cream

All the flavours of a French galette des rois, rolled into mini croissants: puff pastry, almond cream and a charm hidden in one of them. The Croissants Party board and rolling pin cut the pastry into identical triangles in a single pass.

Method

  1. Take the rack out of the oven and heat the oven to 200 °C (400 °F).

  2. Put the ground almonds, butter, sugar, almond extract and egg in a Tupperware DuoChef and mix on second speed to an almond cream. Beat the egg yolk with the water for the glaze.

  3. Lay the pastry on the mini croissant side of the Tupperware Croissants Party and roll over it with the rolling pin to cut out the triangles.

  4. Place a little almond cream on each triangle. With the Silicone Brush, paint a 2 cm (3/4 in) strip of glaze along the inner edge of the pastry, and push the charm into the cream of one croissant.

  5. Roll up the croissants and lay them on the silicone baking sheet set on the cold oven rack. Brush them all over with glaze.

  6. Bake on a low shelf for 20 to 25 minutes, until puffed and golden.
