Light Dairy-Free Baked Donuts

Baked rather than fried, these light donuts use plant milk and a little oil instead of butter, with a hint of orange or lemon. Two silicone donut moulds bake twelve at once and release them cleanly, and the wet ingredients are mixed in a shaker.

Method

  1. Heat the oven to 180 °C (350 °F), fan setting. In a large bowl, combine the flour, sugar and baking powder.

  2. Shake the plant milk, egg, oil and flavouring together in a 350 ml Tupperware shaker.

  3. Pour the liquid into the bowl while stirring with the Whisk. If the batter is too thick, add a splash more plant milk; stop mixing as soon as it is smooth so it does not turn sticky.

  4. Place two Tupperware silicone donut moulds side by side on the cold oven rack, fill the rings with batter and bake for about 20 minutes.

  5. In a small bowl, mix the icing sugar with the citrus juice using the Silicone Brush.

  6. Leave the donuts to cool slightly, turn them out and spoon or brush the glaze over the top.
