Individual Crab Cakes

Small savoury crab cakes bound with egg and breadcrumbs and seasoned with mustard and a little chilli. The Mini Football Mould shapes six even portions that bake without turning and slip out cleanly after a short rest.

Method

  1. Heat the oven to 220 °C (425 °F), conventional setting. Squeeze the crab firmly to remove as much liquid as possible.

  2. Peel the shallot, cut it into pieces and chop it finely in the TurboTup.

  3. In a 2 l measuring jug, stir the crab, shallot, eggs, breadcrumbs, mustard, oil, chilli paste and a little salt together with a silicone spatula. Divide the mixture between the cavities of the Tupperware Mini Football Mould placed on the cold oven rack.

  4. Bake on a low shelf for about 20 minutes, then leave to stand for 5 minutes before turning out. Serve with a green salad and, if you like, an herb mayonnaise.
