Freezer Burritos

Make-ahead burritos filled with rice, black beans, cooked steak or chicken and Monterey Jack, browned in butter before freezing. Reheated in the MicroPro Grill, they come out hot through the centre with a crisp tortilla instead of the soft wrap a plain microwave gives.

Method

  1. Spread 1/4 cup (40 g) rice on each tortilla, then share out the beans and meat and sprinkle each with 2-3 tbsp cheese.

  2. Fold in the sides and roll each tortilla up tightly.

  3. Melt 1 tbsp butter in a frying pan over medium heat and brown the burritos, seam side down first, on all sides, adding butter as needed. Leave to cool for 10 minutes.

  4. Pack the burritos into a Tupperware freezer container, seal and freeze for up to 2 weeks.

  5. To reheat, put a frozen burrito in the base of the Tupperware MicroPro Grill, close the cover in the grill position and microwave on high (1000 W) for 5-7 minutes. Serve with salsa.
