
Vegetable Rectangles
Small baked vegetable bars made from finely chopped carrot, courgette and leek, held together with egg, milk and instant mash. The Crousty Party with its rectangle insert presses the mixture into even logs that you slice to length, so every piece bakes at the same rate.

Method
Peel and wash the vegetables, cut them into chunks and chop them finely in several batches in the Tupperware SuperSonic Chopper.
Steam the chopped vegetables in the Tupperware Micro Urban for about 10 minutes at 600 W. Leave to stand for 5 minutes, squeeze out as much water as you can, then let them cool.
In the Tupperware Mixing Bowl 3.5 l, combine the eggs, milk, potato flakes, salt and pepper. Add the well-drained vegetables and stir with a silicone spatula until evenly mixed.
Fit the Tupperware Crousty Party with the rectangle insert, fill it with the mixture and press down firmly. Cut the bars to the size you want and lift them gently onto a lined rimmed baking sheet set on the cold oven rack.
Bake for about 20 minutes in a fan oven preheated to 200 °C (400 °F). Serve with meat or fish, or on their own.
