Potato and Parmesan Croquettes

Crisp breadcrumbed croquettes of Parmesan mashed potato, baked rather than deep-fried. The potatoes steam in the microwave, and the Crousty Party presses the mash into even logs, so every croquette is the same size and cooks through in the same time.
