Chicken and Chickpea Croquettes

A good way to use leftover roast chicken: minced with chickpeas, garlic and parsley, then breadcrumbed and pan-fried. The AdaptaChef mincer gives a fine, even mixture and the Crousty Party shapes it into logs you simply cut to the length you like.

Method

  1. Mince the chicken and chickpeas twice with the Tupperware AdaptaChef mincer over the Tupperware Mixing Bowl 3.5 l, for a fine, smooth texture.

  2. Chop the parsley and garlic in the Tupperware SuperSonic Chopper Compact. Add them to the bowl with salt, pepper and the beaten egg, and mix with the Tupperware Silicone Spatula until the mixture holds together in a ball.

  3. Fill the Tupperware Crousty Party fitted with the 3-round insert and press.

  4. Cut the croquettes to the length you like. Push out the remaining mixture with the thin silicone spatula to make a few more.

  5. Beat the egg with the milk for the coating. Dip each croquette in the egg, then roll it in the breadcrumbs.

  6. Heat the oil in a sauté pan over medium heat and fry the croquettes until golden on all sides. Drain on kitchen paper if needed and serve with raw vegetables or a green salad.
