
Mosaic Gelatin
A Latin American party dessert, gelatina de mosaico: cubes of four coloured fruit gelatins suspended in a sweet jelly made with evaporated and condensed milk. The Jel Party mould has a removable centre and a sealing cover, so the ring sets upside down and releases cleanly when turned over.

Method
Lightly oil 4 square fridge containers that each hold at least 470 ml (2 cups) and empty one packet of flavoured gelatin into each.
Bring 940 ml (4 cups) water to the boil and pour 235 ml (1 cup) into each container, stirring until the powder dissolves. Stir 120 ml (1/2 cup) cold water into each, cover and refrigerate for 5 to 6 hours, until firm.
Turn out the set gelatins and cut them into 1 in (2.5 cm) cubes. Fit the core seal in the centre of the Tupperware Jel Party and oil the mould lightly.
In a microwave-safe container, stir the unflavoured gelatin into 120 ml (1/2 cup) of the cold cream or milk and leave for 2 minutes to soften. In a medium Tupperware Thatsa Bowl, stir together the evaporated milk, condensed milk and the rest of the cream or milk.
Microwave the softened gelatin at 900 W for 30 seconds; it should be fully liquid, otherwise give it 15 seconds more at 900 W. Stir it into the milk mixture.
Pour 235 ml (1 cup) of the milk mixture into the Jel Party, scatter in some gelatin cubes and cover with more milk mixture. Keep layering until the mould is full, finishing with milk mixture; a little may be left over.
Put the cover on and refrigerate for 6 to 8 hours, until firm. Turn the Jel Party over so the cover is underneath, remove the centre insert and lift off the mould. Keep in the fridge until serving.
