
Quick Pickled Mango
Tangy, crunchy strips of green mango in a sweet-sour brine, with a little chili if you want heat. Firm unripe mango is slippery to cut, and the Serrated Utility Knife grips the flesh so you can take it cleanly off the stone.

Method
Peel the mangoes. Cut the flesh away from the stone with the Tupperware Serrated Utility Knife, then slice it into strips about 1/2 inch (1 cm) wide.
Bring the vinegar, sugar and salt to the boil in a small saucepan, stirring until dissolved, then take off the heat.
Put the mango and the chili, if using, in a heatproof jar and pour over the hot brine to cover completely.
Cool to room temperature, cover and refrigerate for 48 to 72 hours before serving.
