Quick Pickled Red Onion

Method

  1. Peel the onion and slice it with the Tupperware Chef Knife into rings or half-moons about 1/8 inch (3 mm) thick.

  2. Bring the vinegar, water, sugar, salt, garlic and peppercorns, if using, to the boil in a small saucepan, stirring until the sugar and salt dissolve. Take off the heat.

  3. Put the onion in a heatproof jar and pour the hot brine over it so it is fully submerged.

  4. Leave to cool, then cover and refrigerate for at least 2 hours, ideally 24 hours, before serving.
