Roast Chicken with Potatoes and Carrots

A whole chicken roasted on a bed of red potatoes, carrots and onion with a garlic, rosemary and smoked paprika rub. Because the Ultra Pro casserole is safe in both the microwave and the oven, the bird starts cooking in the microwave and finishes browning in the oven in about half the usual time.

  1. Heat the oven to 425 °F (220 °C).

  2. Spread the potatoes, carrots and onion in the Tupperware Ultra Pro 3.5 l casserole.

  3. In a small bowl, stir together the olive oil, vinegar, pepper, salt, paprika, garlic and rosemary.

  4. Set the chicken on the vegetables and rub the seasoning all over it, putting a spoonful inside the cavity too.

  5. Cover and microwave for 15 minutes at full power (1000 W).

  6. Transfer the covered casserole to the oven and roast for 15 minutes, until the thickest part of the thigh reaches 165 °F (74 °C). For a browner skin, uncover and roast for 5 minutes more. Let rest for 5 minutes before carving.
