
Baked Mini Cheesecakes with Strawberry Coulis
Individual baked cheesecakes on a buttery speculoos crumb, finished with a quick strawberry coulis. The silicone moelleux mould gives each one straight sides, and once chilled they slip out with a little help from a thin spatula.

Method
Heat the oven to 180 °C (350 °F), conventional setting.
In the Tupperware 1 l mixing bowl, whisk the cream cheese, sugar, egg and vanilla slowly, so as not to beat in air.
Blitz the biscuits to a powder in the Tupperware SuperSonic Chopper Tall, add the butter and blitz again to a coarse crumb.
Press the crumb into the cavities of the Tupperware silicone moelleux mould with the back of a spoon, then spoon the cream cheese mixture on top. Tap the mould lightly to release any air bubbles.
Bake on a low shelf for 20 to 25 minutes, until puffed and domed; they will sink as they cool.
Meanwhile, set aside 3 strawberries and halve them. Blend the rest with the icing sugar and lemon juice in the clean chopper.
Cool the cheesecakes completely in the fridge, then run a thin spatula around the edges to turn them out. Spoon over the coulis and top each with half a strawberry.
