
Carnitas-Style Pork Tacos with Spicy Slaw
Soft tacos filled with pork tenderloin roasted in a chipotle tomato sauce and topped with a creamy, spicy slaw. The Ultra Pro roasts the pork covered so it stays juicy, and the SuperSonic Chopper Tall chops the onion, jalapeño and cilantro for the sauce.

Method
In a Tupperware Thatsa medium bowl, stir the sour cream, mayonnaise, hot sauce, mojo seasoning and lime juice. Add the coleslaw mix and red onion, toss to coat, cover and refrigerate for at least 1 hour or overnight.
Heat the oven to 325 °F (160 °C). Put the onion, jalapeños and cilantro in the Tupperware SuperSonic Chopper Tall fitted with the blade, close and pull the cord several times until finely chopped.
In the Tupperware Ultra Pro 2 l (2 qt) casserole, mix the tomato sauce with the chopped onion mixture and 2 tsp chipotle seasoning. Rub the pork with the remaining 2 tbsp seasoning and set it in the sauce, tucking the thin ends underneath.
Cover and roast for 25 minutes, until the centre of the pork reaches 155 °F (69 °C). Take out of the oven and leave to rest, covered, for 10 minutes.
Stack the tortillas on a microwave-safe plate, cover with a damp paper towel and microwave at full power (1000 W) for 45 seconds.
Slice the pork and fill the warm tortillas with the meat, a spoonful of sauce from the Ultra Pro and the slaw. Serve with lime wedges.
