Chicken Sauté with Aubergine and Olives

Method

  1. Rinse the cherry tomatoes and halve them. Wipe the aubergine, slice it into rounds, then cut each round in half.

  2. Cut the chicken fillets into bite-sized pieces.

  3. Heat 25 ml (1 1/2 tbsp) of the olive oil in the Tupperware Black Series Saucepan 1.4 l and brown the chicken on all sides.

  4. Add the Moroccan-style olives and cook for 5 minutes over high heat. Season with pepper, stir in the chopped garlic at the very end and take off the heat.

  5. Meanwhile, heat the remaining 250 ml (1 cup) olive oil in a frying pan and fry the aubergine pieces until golden. Lift them out onto kitchen paper to drain.

  6. Gently fold the cherry tomatoes and fried aubergine into the chicken and olives, and serve.
