
Crispy Mexican Chocolate Truffles
Dark chocolate truffles with coconut and cornflakes in the filling, rolled in a crunchy coating of cornflakes, cinnamon and a little cayenne. The ganache melts and sets in the TupperWave Stack Cooker casserole, and its upturned cover holds the coating while you roll.

Method
In the Tupperware TupperWave Stack Cooker 1.75 l casserole, stir together the chocolate, cream, butter, vanilla, 1 cup (50 g) of the cornflakes and the coconut.
Microwave at full power (1000 W) for 1 minute. Cover and leave to stand for 1 minute, then stir until melted and glossy.
Cover and refrigerate for 30 to 45 minutes, until the filling is firm enough to scoop.
Meanwhile, mix the remaining cornflakes with the cinnamon and cayenne in a Thatsa Bowl, then tip the mixture into the upturned Stack Cooker cover.
Scoop about 1 tbsp of filling, roll it into a ball and roll it in the coating, pressing gently so the cornflakes stick. Repeat with the rest.
Refrigerate the truffles for 10 to 15 minutes, until firm, and serve chilled or at room temperature.
