
Piña Colada Gelatin Ring
A creamy set dessert made with coconut milk, cream of coconut, crushed pineapple and pecans, turned out as a ring. The Jel Party mould has a removable centre insert and a cover that becomes the base, so the gelatin unmoulds cleanly in one piece.

Method
Fit the core seal in the centre of the Tupperware Jel Party and brush the inside lightly with oil.
In a microwave-safe container, stir the gelatin into the cold water and leave it to soften for 2 minutes.
In a large Tupperware Thatsa Bowl, stir the coconut milk with the sour cream, crème fraîche or yogurt, then stir in the cream of coconut.
Microwave the softened gelatin at 900 W for 30 seconds; it should be fully liquid. If not, give it another 15 seconds at 900 W. Stir it into the coconut mixture until completely blended.
Stir in the crushed pineapple with its juice, the shredded coconut and the pecans. Pour into the Jel Party, cover and refrigerate for 6 to 8 hours, until firm.
Turn the Jel Party over so the cover is underneath, then pull out the centre insert and lift off the mould; the ring should slide out on its own.
Fill the centre with pineapple chunks, sprinkle with coconut and keep in the fridge until serving.
