Method

  1. Stir the yeast and sugar into the warm water and leave for about 5 minutes.

  2. Add the olive oil, salt and flour and knead into a smooth dough.

  3. Heat the oven to 190 °C (375 °F). Roll the dough into a square of about 20 x 20 cm (8 x 8 in) and cut it into bands with the Tupperware Cornets Party strip cutter, or into 4 triangles. Wrap them around the cones, sealing the edges and tip well.

  4. Brush with the oil, sprinkle with Parmesan and bake for about 12 minutes. Slide the cones off the moulds and leave to cool.

  5. Slice the tomatoes, mozzarella and olives into rounds, toss them with the rocket and vinaigrette, fill the cones and serve at once.
