Roasted Garlic Soup

A smooth, surprisingly gentle soup built on two whole heads of roasted garlic, sharpened with sherry vinegar. The MicroPro Grill roasts the garlic in 10 minutes, the Chef Series sauteuse softens the onion and simmers the soup, and the SuperSonic Chopper Extra purees it without electricity.

Method

  1. Separate the garlic cloves and put them in the base of the Tupperware MicroPro Grill with the olive oil, salt and pepper; toss to coat. Pour the 1/4 cup (60 ml) water into a corner so it fills the channel, then cover in casserole position.

  2. Microwave on high power (1000 W) for 10 minutes. Carefully peel the cloves, stir them into the cooking water in the grill and set aside.

  3. Melt the butter in the Tupperware Chef Series 3 l sauteuse over medium heat. Add the onion and thyme and cook for about 5 minutes, until soft.

  4. Add the roasted garlic, vinegar, 1 1/2 cups (355 ml) water and stock. Stir, cover and simmer for 20 minutes.

  5. Let cool slightly, then puree in the Tupperware SuperSonic Chopper Extra fitted with the blade, in batches if needed. Season and serve with a drizzle of cream, parsley and toasted bread.
