
Soy-Glazed Green Beans, Tofu Curry and Coconut Rice
A full vegetarian dinner in three parts: a red curry of tofu in coconut milk, coconut brown rice and green beans glazed with soy and ginger. The TupperWave Stack Cooker piles the three dishes up so everything cooks at the same time in the microwave.

Method
In a Tupperware Thatsa medium bowl, toss the green beans with the green onions, ginger, soy sauce, rice vinegar and oil. Turn the 3/4 qt (750 ml) cover of the Tupperware TupperWave Stack Cooker upside down, spread the beans in it and set aside.
Put the butter, onion and curry paste in the 1 3/4 qt (1.75 l) casserole and microwave on high power (1000 W) for 2 minutes. Stir in the garlic, cornstarch, salt, pepper, tofu and the coconut milk for the curry.
In the 3 qt (3 l) casserole, stir together all the rice ingredients.
Set the curry casserole on top of the rice casserole and cap the stack with the upturned cover holding the beans. Microwave on high power (1000 W) for 15 to 20 minutes, until the rice is tender and the beans are crisp-tender.
Stir each dish, leave to stand for 3 to 8 minutes, then serve warm.
