Southwest Salmon Salad

  1. Fill the water tray of the Tupperware Smart Multi-Cooker with water. Season the salmon on both sides with the salt and 1/4 tsp of the smoked paprika and lay it in the casserole tray. Set the casserole tray on the water tray.

  2. Spread the corn and beans in a single layer in the steamer tray, season lightly with salt and set it on top of the casserole tray.

  3. Microwave on high power (1000 W) for 8 minutes, until the salmon is cooked through.

  4. Meanwhile, toss the romaine and tomatoes in a medium bowl. In a small bowl, stir together the sour cream, olive oil, vinegar, garlic and the rest of the smoked paprika, and season with salt and pepper.

  5. Add the corn and beans to the salad and toss. Flake the salmon over the top, scatter with corn chips and drizzle with the dressing.
