Spicy Chicken and Sweet Potato Stew

Method

  1. Halve the onion and the chilli (lengthwise) and dice them with the small grid of the Tupperware Super Dicer.

  2. Put the chicken breasts in the Tupperware Microwave Pressure Cooker with the onion, chilli, garlic, ginger and one third of the tomatoes. Season and stir gently with a silicone spatula.

  3. Slice the sweet potatoes 0.6 in (1.5 cm) thick, dice them with the large grid of the Super Dicer and spread them over the chicken. Salt lightly and top with the rest of the tomatoes.

  4. Close and lock the cooker, then microwave at 900 W for 23 minutes. Leave it closed out of the microwave until the pressure indicator drops, about 15 minutes, before unlocking.

  5. Gently stir in the coriander, peanut butter and cilantro. Cut each chicken breast into three pieces, sprinkle with the peanuts and serve with rice.
