  1. Heat the oven to 180 °C (350 °F), fan setting. Toast the breadcrumbs and pine nuts in a hot, dry frying pan until golden, then set aside.

  2. Wash the aubergines and slice them thinly with the Tupperware MandoChef.

  3. Spread a little tomato sauce over the base of the Tupperware Voilà Dish 3 l rectangular. Layer aubergine slices, tomato sauce, basil leaves, salt, pepper and Parmesan, repeating until everything is used and ending with sauce and Parmesan. Scatter the toasted crumbs and pine nuts on top.

  4. Bake uncovered for about 25 minutes. Drizzle with the olive oil as it comes out of the oven and serve hot or cold with a rocket salad.
