Coconut Lime Bread

A moist coconut cake flavoured with lime zest and finished with a sharp lime glaze and shredded coconut. It cooks in the microwave in the MicroPro Grill fitted with the Pro Ring, which gives a neat round cake in about 15 minutes without heating the oven.

Method

  1. In the Tupperware Thatsa Bowl, whisk the sugar, coconut milk, coconut oil, eggs and zest of 1 lime until combined.

  2. Add the flour, baking powder, salt and 1/4 cup shredded coconut and stir with the Tupperware Silicone Spatula until the batter is smooth.

  3. Set the Tupperware Pro Ring in the base of the Tupperware MicroPro Grill and lightly oil the base and the cover.

  4. Pour the batter into the ring, put the cover on in the grill/low position and microwave for 12-15 minutes at 50% power (about 450 W).

  5. Leave to stand for 15 minutes, then lift off the ring and use the spatula to free the cake from the base. Let it cool completely.

  6. Whisk the powdered sugar and lime juice in a small bowl until smooth. Pour over the cooled cake and scatter with the lime zest and remaining coconut.
