Coconut Vegetable Curry

A mild vegetable curry of sweet potato, courgette and red pepper simmered in coconut milk with onion, garlic, ginger and warm spices. The AdaptaChef 15 mm dicing grid cuts all the vegetables to the same size so they cook through together in the microwave.

  1. Peel the onion, garlic and ginger and chop them finely.

  2. Peel the vegetables, seed them where needed and cut them into cubes with the Tupperware AdaptaChef fitted with the 15 mm dicing grid.

  3. Combine the chopped onion mixture and the vegetables in a microwave-safe baking dish.

  4. Stir the mustard, spices, salt and pepper into the coconut milk and pour over the vegetables. Cover and cook for about 25 minutes at 600 W.
