Cream Brioche Rings

Small, soft brioche rings enriched with cream, eggs and butter and topped with crunchy brown sugar. The batter needs no kneading: it is simply stirred and poured into the silicone donut mould, which releases the rings cleanly once baked.

Method

  1. Stir the yeast into the water in a small 300 ml bowl and leave for 5 minutes.

  2. Heat the oven to 200 °C (400 °F).

  3. In the Tupperware Mixing Bowl, combine the flour, sugar and rehydrated yeast with a silicone spatula.

  4. Add the eggs, cream and melted butter and beat for a good few minutes until the batter is smooth and elastic.

  5. Place the Tupperware silicone donut mould on the cold oven rack, pour in the batter and sprinkle with the brown sugar. Bake for about 40 minutes.

  6. Turn the rings out and serve them warm.
