Fruit Gratin with Orange Liqueur Sabayon

Diced apple, banana and pineapple are baked with brown sugar, then covered with a light sabayon of whipped cream, egg and orange liqueur and flashed in a very hot oven. The Super Dicer cuts all the fruit to the same size, and the Premiaglass casserole takes the fruit from covered baking to browning without a transfer.
