
Irish Soda Bread with Stout Butter
A rustic soda bread flavoured with molasses and toasted caraway, served with butter beaten with stout and brown sugar. The TupperWave Stack Cooker and its centre cone turn it into a ring loaf that cooks through in the microwave in 8 minutes instead of an hour in the oven.

Method
Butter and flour the 3 l casserole base and the cone of the Tupperware TupperWave Stack Cooker, then set the cone in the centre of the base.
Whisk the flour, baking powder, cream of tartar and salt together in a large Tupperware Thatsa Bowl. Rub in the room-temperature butter with your fingertips until the mixture looks like coarse crumbs, then stir in the caraway seeds.
Whisk the buttermilk and molasses together in a small bowl. Make a well in the flour, pour in the buttermilk mixture and draw the flour in with a spatula or fork until a crumbly dough forms. Knead very briefly, just until the dry bits come together; the dough should stay rough.
Drop pieces of dough about 3 in (7.5 cm) across into the Stack Cooker, forming a loose ring around the cone. Pour the melted butter over the top if using.
Microwave uncovered on high power (1000 W) for 8 minutes. Leave to stand for 10 minutes before turning the bread out.
For the stout butter, stir the softened butter, stout and brown sugar together in a medium Thatsa Bowl until smooth. Cover and chill until serving with slices of the warm bread.
