
Margarita Cupcakes with Lime Buttercream
Light cupcakes made from a vanilla cake mix with margarita mix and lime zest, topped with a tangy lime buttercream. The Whip N Mix Chef mixes the batter and then the frosting by hand, and the Silicone Muffin Mould releases the cupcakes without liners.

Method
Heat the oven to 350 °F (180 °C).
Put the eggs, margarita mix, oil and half the lime zest in the Tupperware Whip N Mix Chef and turn the handle on gear I until well blended.
Add the cake mix in two additions, switch to gear II and mix until smooth.
Fill the cavities of the Tupperware Silicone Muffin Mould two-thirds full and bake for 12 to 14 minutes, until a toothpick inserted in the centre comes out clean. Bake the remaining batter the same way and let the cupcakes cool completely.
For the buttercream, mix the butter, lime juice and remaining zest on gear I until smooth. Switch to gear II and add the powdered sugar 1/2 cup (60 g) at a time, then add the cream and keep turning until light and creamy.
Pipe or spread the buttercream on the cupcakes and decorate as you like.
