Method

  1. Heat the oven to 180 °C (350 °F).

  2. Drain the pineapple and cut it into small pieces. Mix it with the egg, sugar, rum, flour, baking powder, 45 ml (3 tbsp) of the coconut and 15 ml (1 tbsp) of the oil.

  3. Pour the rest of the oil into the Tupperware Cornets Party cones, turn them to coat the inside and tip out the excess.

  4. Fill the cones, stand them point down in a deep dish and bake for about 16 minutes (or microwave for about 3 minutes at 360 W). Cool for 10 minutes, then ease the cakes out.

  5. Stir the icing sugar and lemon juice into a thick glaze, pour it over the trees and dust with the remaining coconut.
