Pork Pozole Verde

Method

  1. Put the tomatillos, poblano, onion and garlic in a microwave-safe container and microwave on high power (1000 W) for 3 minutes. Leave to cool.

  2. Put the cooked vegetables and the cilantro in the Tupperware SuperSonic Chopper fitted with the blade, cover and pull the cord until you have a smooth salsa. Season to taste.

  3. Trim the excess fat from the pork and cut it into 3 in (7.5 cm) cubes. Put them in the base of the Tupperware Microwave Pressure Cooker and season with salt and pepper.

  4. Add the salsa verde, hominy, cumin, oregano, crumbled bouillon cube and water, and stir.

  5. Close and lock the cover, microwave on high power (1000 W) for 20 minutes, then let the pressure drop on its own before opening.

  6. Lift out the pork, shred it in the SuperSonic Chopper and return it to the pot. Serve hot with the toppings.
