
Oven-Fried Chicken Sandwich with Yogurt Hot Sauce
Chicken tenders double-coated in seasoned flour and buttermilk, crisped in the oven rather than deep-fried, and served in buns with a cool, spicy yogurt sauce. The Ultra Pro casserole and its cover act as two baking dishes, so all the chicken fits in one batch.

Method
Heat the oven to 400 °F (200 °C).
Whisk the buttermilk and egg together in a small bowl. In a second bowl, mix the flour, breadcrumbs, baking powder, salt, garlic powder and onion powder.
Coat each tenderloin in the flour mixture, dip it in the buttermilk mixture, then coat it in flour again.
Put half the butter in the Tupperware Ultra Pro 2 l casserole and the other half in its cover. Microwave each for 30 seconds on high power (1000 W) to melt.
Lay the chicken in the casserole and the cover over the melted butter, keeping the pieces apart.
Bake for 20 to 25 minutes, turning the pieces carefully halfway through, until the chicken reaches 165 °F (74 °C) inside.
While the chicken cools slightly, stir the yogurt, hot sauce, lime juice and salt together.
Fill each bun with 2 tenderloins and about 2 tbsp of the sauce.
