Potato and Sweet Potato Mash

A two-potato mash, half russet and half sweet potato, enriched with cream and butter and topped with onion and sage browned in butter. The potatoes steam whole in their skins in the Smart Multi-Cooker, so the flesh stays dry and fluffy and the skins twist off once cooked.

Method

  1. With the Tupperware Paring Knife, score the skin of each potato in a line all the way round. Put them in the shielded colander of the Tupperware Smart Multi-Cooker, fill the base with water to the maximum steaming line, stack the colander on the base and cover. Microwave on high power (1000 W) for 20 minutes.

  2. Leave to cool for 5 minutes, then twist each potato to pull off the skin and put the flesh in a medium bowl.

  3. Mash the potatoes with the cream and 5 tbsp of the butter, keeping 1 tbsp aside.

  4. Heat the reserved butter in a small saucepan over medium heat and brown the onion for about 5 minutes. Add the sage and cook until it smells fragrant, then take off the heat.

  5. Spoon the onion and sage into the centre of the mash and stir in. Season with salt and pepper and serve warm.
