Prawn, Vegetable and Coriander Stir-Fry

A fast stir-fry of prawns, courgette batons, mushrooms and bean sprouts, seasoned with soy sauce, fresh coriander and a pinch of Espelette pepper. Method

  1. Trim the mushrooms, then peel them or rinse them carefully; cut any large ones in half.

  2. Wash the courgettes and cut them into 4 cm (1 1/2 in) lengths. Slice these into sticks with the Tupperware Coup' Chef fitted with the 10 mm blade.

  3. Heat the olive oil in the Tupperware Chef Series Wok 4.2 l over high heat and stir-fry the prawns for 2 minutes. Lift them out into a small Tupperware serving bowl (600 ml) and keep them aside.

  4. Put the courgettes and mushrooms in the hot wok with the salt and stir-fry for 3 minutes. If you like the vegetables softer, add the water, cover and cook for 1 minute more.

  5. Tip in the bean sprouts, return the prawns to the wok, add the soy sauce and cook for 1 minute, tossing.

  6. Chop the coriander finely, scatter it over with the Espelette pepper and serve at once.
