Quick Veal Blanquette

A fast version of the French classic: small cubes of tender veal are seared, then simmered briefly with vegetables in cream thickened with cornflour. The Chef Series Junior Wok gets hot enough to brown the meat quickly and holds the whole dish, so there is only one pan to wash.

Method

  1. Cut the veal into pieces of about 2 cm (3/4 in). Peel the carrot and dice it with the Tupperware Coup' Chef fitted with the 10 mm blade, then cut the mushrooms with the Coup' Chef as well. Trim the green tops off the spring onions and halve the bulbs.

  2. Heat 15 ml (1 tbsp) oil in the Tupperware Chef Series Junior Wok and brown the veal over high heat in two batches, about 3 minutes in all. Transfer it to the Iso Duo microwave container 2.5 l while you cook the vegetables.

  3. Without washing the wok, add the remaining oil and stir-fry the vegetables over high heat for 2 to 3 minutes.

  4. Return the veal to the wok and pour in the cream. Season lightly with salt, add pepper, cover and simmer for 4 minutes.

  5. Shake the cornflour and cold water together in the Quick Shake, stir the mixture into the wok and simmer for 2 minutes, stirring often. Serve with rice or with mashed potatoes made with the potato masher.
