Zucchini Parmesan Bites

Small baked zucchini balls bound with Parmesan, egg and breadcrumbs and flavoured with garlic and green onion. The Mandoline grates the zucchini straight into the bowl, and the Microfiber Towel wrings out the water so the bites hold their shape and brown in the oven.

Method

  1. Heat the oven to 400 °F (205 °C). Lay a Tupperware Silicone Baking Sheet with rim on a baking tray.

  2. Lock the food guide into the body of the Tupperware Mandoline set to grate and place it over a medium bowl. Put a piece of zucchini in the guide, press it down with the plunger and grate. Repeat with the rest of the zucchini, and with the Parmesan if it is not already grated.

  3. Wrap the zucchini in the Tupperware Microfiber Towel and twist hard to squeeze out as much water as possible. Measure 1 cup (about 150 g) of drained zucchini.

  4. Put the zucchini and Parmesan in a mixing bowl with the egg, breadcrumbs, garlic, green onion, salt and pepper and mix well.

  5. Shape the mixture into balls of about 1 tbsp and set them on the silicone sheet. Bake for 15 minutes, until golden brown.
