Summer Squash Salad

A raw salad of zucchini and yellow squash in thin strips, salted to draw out water and dressed with a lemon, rice vinegar, honey and cilantro vinaigrette. The Mandoline cuts even strips in seconds, and the SuperSonic Chopper Tall chops the garlic, onion and herbs straight into the dressing.

Method

  1. Set the Tupperware Mandoline with the round knob on 2 and the triangular knob on 6, and cut the zucchini and squash into thin strips. Toss them with 1/4 tsp salt in a large bowl, leave for 10 minutes, then pour off the liquid.

  2. Put the lemon juice, olive oil, rice vinegar, garlic, cilantro, red onion, honey and remaining salt in the Tupperware SuperSonic Chopper Tall. Close and pull the cord until the dressing is finely chopped and blended.

  3. Pour the dressing over the vegetables, toss gently and refrigerate for 20 minutes.

  4. Scatter the poppy seeds over the salad just before serving.
