Beef Zucchini Boats

Method

  1. Set the colander of the Tupperware Stack Cooker inside the 1.75 l (1 3/4 qt) casserole. Add the beef, onion and chipotle seasoning to the colander.

  2. Cover and microwave at full power (1000 W) for 5 to 6 minutes, stirring once halfway, until the beef is cooked through. Stir in the tomatoes.

  3. Halve the zucchini lengthwise, scoop out the seeds with a spoon and sprinkle the cut sides with the salt. Arrange the halves in the 3 l (3 qt) casserole and in the 750 ml (3/4 qt) casserole turned upside down.

  4. Spoon the beef mixture into the boats and cover with the mozzarella. Stack the inverted 750 ml casserole on top of the 3 l casserole and microwave at full power (1000 W) for 5 to 8 minutes, until the cheese has melted and the zucchini are just tender. Serve hot.
