Cheese Gougères

Gougères are small savoury choux puffs flavoured with cheese, served warm with drinks. The first stage of choux pastry is done in the MicroCook Pitcher: the water and butter boil in the microwave and the dough is beaten in the same jug, with no saucepan to watch.

Method

  1. Heat the oven to 210 °C (410 °F), conventional setting. Put the water, salt and butter in the Tupperware MicroCook Pitcher 1 l, set the lid to the open position and microwave for about 4 minutes at 600 W.

  2. Tip in all the flour at once and beat hard with the Tupperware Silicone Spatula until the dough is smooth and comes away from the sides. If it still looks wet, heat it again in 30-second bursts at 600 W.

  3. Beat in the eggs one at a time, mixing well after each, until the dough is smooth. Stir in 40 g (1/2 cup) of the Emmental.

  4. Using a piping bag with a fluted nozzle, pipe even mounds onto the Tupperware Silicone Baking Sheet. Dip a fork in the glaze and press lightly on top of each one.

  5. Scatter the rest of the Emmental over the puffs and bake on a low shelf for about 30 minutes, until puffed and golden.

For other flavours, replace the Emmental and mix it all into the dough: 35 g (1 1/4 oz) finely chopped olives, chorizo or anchovies, 40 g (1 1/2 oz) sun-dried tomatoes, 50 g (1 3/4 oz) crumbled Roquefort or a bunch of snipped chives. Once cool, gougères can be split and filled with cream cheese mixed with chopped red pepper.
