
Chocolate Mousse Yule Log
A classic Christmas log: a light sponge rolled around whipped cream and covered in an easy dark chocolate mousse. The silicone baking sheet lets you roll the sponge while it is still hot, which sets its curve and stops it cracking later.

Method
Heat the oven to 180 °C (350 °F) and take out the rack. In the Tupperware Mixing Bowl 3.5 l, whisk the egg yolks with the sugar using a flexible whisk until the mixture has tripled in volume. Fold in the flour and oil with a silicone spatula.
Whisk the egg whites to stiff peaks in the Tupperware DuoChef, whisk attachment I, and fold them into the yolk mixture in two additions.
Place the Tupperware silicone baking sheet on the cold oven rack, pour on the batter and spread it evenly with the spatula. Bake for 10 to 12 minutes.
Using oven gloves, take the sponge out and roll it up at once together with the sheet. Leave to cool for 10 to 15 minutes so it keeps its curve.
Whip the cream in the DuoChef. Unroll the sponge, spread it with half the cream, roll it up again and chill.
Melt the chocolate in the closed Tupperware MicroCook Pitcher 1 l for 2 1/2 minutes at 360 W. Leave for 1 minute, then stir; give it another 30 seconds at 360 W if needed. Fold in the remaining whipped cream in two additions to make a smooth mousse.
Cut a few centimetres off one end of the roll at an angle and stick it on the side with a little mousse to form a branch. Cover the whole log with mousse and mark bark lines with a fork.
Chill until serving. Just before bringing it to the table, decorate with herbs and fruit and dust with icing sugar.
